Hey all! Welcome to my corner of the blogging world. Nothing too profound going on here. Just a few thoughts about life, kids, pregnancy and lack there of.
The menu plan is alright... I haven't really learned how to cook complete meals without meat, I'm more or less cooking a normal meal, just without the meat... does that make sense? I need to learn more ways to add meat replacements... so we're having meals like, peas and carrots, cooked greens and nuts. (that was lunch, the kids had some baked beans too) and things like yams and broccoli.. being the entire meal, lol I bought some quinoa, I just need to learn how to cook with it. Thankfully my kids like veggies though, what a blessing!
Moosewood is a great vegetarian cookbook. Can he eat beans/lentils/chickpeas, etc. and soy (tofu)? I make alot of vegetarian chili's with veggie ground round, which is easy but filling. Also, made a yummy chickpea curry several times. I put quinoa in a wrap, with cranberries and chicken or turkey, and lettuce or spinach. That was yummy. I use quinoa much like rice. Also I put it in a hearty soup (like barley)
haha! So how is the new menu plan coming? Is it helping him at all? We really need to get together soon. Hope things are better.
